Enoki or Enokitake are significantly different in the wild to the cultivated specimens which people are most familiar with. The enoki found in stores and markets are not exposed to sunlight which results in their white colour and the carbon-dioxide rich environments attribute to their long, thin stems. While the wild specimens are also edible great care should be taken as they closely resemble other poisonous species.
